The expression "sans doute" already exists and rather illogically means, "probably"
You could add "un" in there, I suppose, but that's just not how it's said…

As for "sans aucun doute", these days that's how you say "without a doubt" since the meaning of "sans doute" isn't as strong

so i can say "sans doute", but it wouldn't be as strong as "sans aucun doute"?

grammatically I can't think of anything wrong with "sans un doute"… the trouble is no one actually says it that way, so it's just odd

so you should either says "sans doute" if you meaning "probably"
and "sans aucun doute" if you mean "without a doubt"
