Here "en" is not the preposition "in", but rather a pronom personnel. "En" refers to "de clients"

Lawless is actually pretty clear on this. If you look at the article, it says that the ne explétif also appears in comparisons. You have one in your sentence:
« Nous avons plus de clients que nous ne pouvons en compter. »
It wouldn’t really be correct but french people would understand
The ne explétif is rather formal so you don’t HAVE to use it
