(1) This « de » doesn’t come from « en quelque sorte », but from « sortir ». The main clause is « C’est de sortir de leur évidence (It’s to come out from their demonstrability) ».
(2) « de » often appears after « être » when what comes next is an infinitive. Prepositions after verbs followed by infinitives are random and have to be learnt per verb, and this is no exception. For « être », it can be followed by either « à » or « de ». We use the former if the subject is personal and the latter if impersonal.
« Ce repas, c’est difficile à manger (ce = ce repas) »
« C’est difficile de manger ce repas (ce => impersonal, refers to an abstraction) »
