The verb they come from sont is a conjugated form of être (to be) and ont comes from avoir (to have)
wouldn't the first part of the sentence be 'they have sleepy everyday' then?
'Ont' being a choice in this sentence doesn't make sense to me.
avoir sommeil is a fixed expression translating to to Be sleepy rather than to have sleep(y)

If only there was a real explanation for why avoir is used duolingo really doesnt teach the reasoning behind grammer or explain concepts like fixed expressions.
talking out of my ass but i see this in romance languages where you Have temporary states while you Are more fixed things
spanish takes it to the max and uses a temporary vs a longterm be verb
j'ai sommeil, j'ai soif, j'ai chaud, mais je suis un homme etc
Ive never payed much attention to Spanish conjugation because I learned it as a second language at home but its giving I just like being different energy 😂

it's different but it is still the same principle of having a distinction between expressing temporary and fixed/longterm states
You use avoir for nouns, être for adjectives.

Je suis assoiffé
J’ai faim
Je suis affamé
J’ai sommeil
Je suis somnolent
J’ai peur
