Hi I have another question if possible, so I was confused what to put in this sentence and I used "du" because "riz" here was quite abstract to me (there are many types of rice). But the book's answer was "Le", as in:
"Le riz n'est pas une spécialité française"

That looks correct. Using 'du riz' would sound odd here.

This is speaking of rice as a generality and thus would use the definite article to separate it from things that not rice like bread. Using « du riz » here would imply that while some rice isn't a French speciality, some rice also is. It can't be both.
