Make it descriptive, including relevant context, but also to the point. This way you improve your chances of getting a more relevant and specific answer.
I think they are interchangeable but « soit X, soit Y » is the one I hear and see the most
technically, in terms of formality, it goes form least to most, ou → ou bien → soit. but in spoken french we use all three all the time, including soit.
- veux-tu du thé ou du café?
- tu peux choisir entre un gâteau, ou bien, une tarte.
- soit tu viens avec moi, soit je pars sans toi.
Isn't the first one just 'or'? The question I think specifically talks about 'either X or Y'

While not quite 'either ... or', I'd say it can come close.
we could say
ou tu m'aides, ou tu pars
either you help me or you leave
but it's not entirely natural
soit tu m'aides, ou tu pars!
would be better
and the most natural would be
soit tu m'aides, soit tu pars!
Idk of soit soit really is more natural, i feel like i hear the first two more actually
