i just finished the ac series once again in french and even though i couldn't find any french dubs or voiceovers only the subtitles was enough to learn new words

True, but feel some words get cut out and from the translation which mess me a little bit up

Or to be honest it probably me used it to seeing it one way and this game is saying it another way which would make more sense.

That’s just how translation is, it’s reinterpreting the text. You can either get faithfulness to the text or a succinct understanding, very rarely both.
