French is generally more strict than English when it comes to that.
The reverse is also true: "the couple are kissing" would be "le couple s'embrasse", singular.

so in this kind of situation it would always be "vos" and not "votre" since "minutes" is plural just as its "les" and not "la"? DeepL gave a possibility of swapping out "Vos" with "Votre" in the original sentence but I was a bit suspicious of that, though it didn't want to swap "les" with "la"

there are some cases where you could potentially swap it out imo but it feels like it'd more or less have to be in quotes
as a general rule though yeah, I'd avoid it until you have a solid instinct for it
