We stopped using subjunctif imperfect in favor to subjunctive present.

Yep. In order for past subjuntive to be used, the event needs to take place before the main clause. But that's not the case, mainly because of "avant que".

Also, in 2), why use particle passe? if the subjet of "asseoir" is “ils”, shouldn't be "assoyant" the participe present?

Past participles are basically adjectival forms of verbs and verbs of state (rester, devenir, demeurer, etc.) are followed by a past participle

Être assis, rester assis.
The past participle notes the result, the current state while the present participle notes the process.

I'm not sure if this is your point of confusion, but thought this would be worth clarifying

  • assoyant is the present participle (je vois l'homme chantant - I saw the man singing)
  • assis is the participle (je vois l'homme assis - I saw the seated man, il reste assis ...)

In this case, with rester, it would be combined with the adjective
