For you're first sentence you can use another connector like "Alors que"
Do not forget either to use comma.

To make sentences more expressive and elegant in french, it's recommended to vary your vocabulary, including the choice of verbs. Instead of using common verbs like "voir (j'ai vu)," you can opt for more descriptive or literary verbs like "appercevoir (j'ai apperçu)."

For example :
You're english sentence without connector :
"Pendant que je marchais sur le côté de la plage, j'ai vu un grand arbre vert."

"Alors que je me promenais le long du littoral de la plage, j'ai aperçu un grand arbre vert"

Ah, yea it exist, but how to find them i don't really know
Most common example could be with the connector "que" (that/than)

"Je pense que" = i think that
Where you can use "that" after a verb in english, i think that you can use it in french too

Another example :
I suppose that... = je suppose que
I know that = je sais que
