Because you express a doubt regarding the truth of the statement in the subordinate clause, subjunctive is used.
You could avoid le subjunctif by saying 'Je pense que mon travail n'est pas extraordinaire'.
Thats what i was going to use before i got corrected by a native. So essentially If i had no doubts that my job was boring, est would be used?
The above is correct according to Le Bon Usage and Le Grand Robert, among others. However, so many native speakers mistakenly use the indicative when penser is in the negative or interrogative that many now believe the subjunctive to be optional. Others disagree.
