Je suis tombé amoureux = I fell in love
J'en suis tombé amoureux = I fell in love with it.

En replaces the noun introduced by the preposition de.
Tomber amoureux de la France = en tomber amoureux

You forgot amoureux there.
Normally you can't have both an object and the pronoun that replaces it at the same time. However, in informal French, we do disjunction a lot to give the duplicated object/subject emphasis.
So, in "J'en suis tombé amoureux, de la France", the "de la France" is here for emphasis.
