No, it should be « je n'ai rien mangé »

in a similar case above I was able to justify why they did that but how can you justify object is here
when only I eat all or smth is mentioned
So, you can actually draw some parallels with English here.
I ate nothing -> Je n'ai rien mangé
Nothing was eaten -> Rien n'a été mangé
In the first case, je/I is the subject and nothing/rien is the object. In the second case, nothing/rien becomes the subejct

Well, one puts the emphasis on the person. The second puts the emphasis on what was eaten
They mean similar but different things

Here, his might be more clear, taking out the object:
J'ai couru -> I ran
Personne n'a couru -> No one ran
it is not used when person is mentioned but put emphasizes on it ?
basically the two sentences have entirely different subjects

The person IS eating, so you're not negating it. You're negating what the person is eating, which is the object
