Oui. Elina Garanca's version of "L'oiseau est un oiseau rebelle" (also known as Habanera) from the musical, Carmen, uses the trilled r.
Classical opera and such does.
I can't speak to poetry, however.

I am just wondering hypothetically if someone does roll the R's. Will there be any scenario when to tap it as in italian or spanish? Or is it always rolled?
