Le premier est incorrecte. C’est pas le subjonctif ici mais le passé antérieur ; si ça avait été le subjonctif on aurait vu « aussitôt que Brown eût parlé » (une autre raison pour laquelle les accents sont importants). Le passé antérieur parle d’une action qui s’est passée avant le passé simple donc quel temps décrit une action qui s’est passée avant le passé composé ? C’est ta réponse.

The anterior past is about an action that happened before the simple past therefore which tense describes an action that hapened before the perfect? That's your answer.
Basically, the first part of your translation is wrong because you mistook the passé antérieur (Brown eut parlé) as the subjonctif plus-que-parfait (Brown eût parlé) – notice the difference in accent. The passé antérieur is a tense that describes something even further from the past than the passé simple, so if you convert the passé simple to the passé composé, which tense describes an action something even further from the past of the passé composé?
