it is just word order. notice taht if you reverse the order it might sound or seem much more comprehensible ...> ils se plaignait d'une grave injustice.
as to your first question I am not certain where your doubt lies...maybe if I translated that into english it would soundd better for you. recieved....they limited themselves to nodding their heads at the chef.....they took us as witnesses. I see it like that. all the actions are in the past, simple past in english
