toute vs toutes
"tout" is a very hard one, because it can be a noun, an adjective, a pronoun or an adverb and rules change based on its grammatical role.
Here, it's a pronoun, completing "elles" -> "elles toutes", and as such agrees with the subject
Ils ont tous dit la même chose.
Elles ont toutes dit la même chose.
but yes, « tout » is difficult as Flynn said
tous not tout, that's singular masc
despite that,
Ils ont tout mangé
Elles ont tout mangé
because here it's an adverb, giving information on the verb manger, not on the subject
But why toute here not agrees with la meme chose
If it were an adjective, it would

Elles ont mangé tout le gâteau => They ate all of the cake (qualifying and agreeing with gâteau)
Elles ont toutes mangé le gâteau => All of them ate the cake (qualifying and agreeing with elles)
