At least by the time they got big they were inconsistent as hell. Thankfully I've mostly had good experiences seeing them live. When I saw them touring on Infinity On High for the Honda Civic Tour, the IOH songs didn't sound great but I mostly think they just hadn't figured out how to play them live yet. Not that they were technically bad, but the songs just didn't sound good live, if that makes sense? But either way, they've either figured out how to make them work better live now, or they've whittled the set list down to only the songs that work live (I think a combination of both, honestly...Thnks Fr Th Mmrs sounded like ass live in 2007 but sounded great live in 2018, but that was a single and a huge hit so they kinda had to keep that in the set list)

I'm not actually sure how much of it (if any) he writes himself. I think it's MOSTLY Pete doing lyrics and Patrick doing the music from Cork Tree onward, but I know Joe and Andy do have input and help with the writing too, but idk if it's like...just editing and tweaking what Patrick came up with or what.
I think Joe spoke out about being frustrated with not having more input so I think he's had more input on the later albums. I've gotten the impression that Andy is honestly just along for the ride having fun...super chill dude, super talented drummer.
I know there's an interview with Patrick about the production on Mania, specifically for the song Church, and he was talking about his first draft and he brought it home to show his wife and she was just like "...Can you imagine Andy playing that?" and Patrick was like "...Fuck. No." so he rewrote the drum part to be something Andy would have fun playing lmfao.

Honestly I don't think it has anything to do with attractiveness. Pete is one of those people who just like...has super main character energy. He's so particular about everything, so he ends up just answering a lot of the questions and doing a lot of the talking, and people just like...gravitate towards him. I don't think he WANTED to be the front man/face of the band...it just happened.
And Patrick is pretty outgoing, but I think back then he was more reserved/unsure of himself because he was a drummer and had never really done much singing before joining Fall Out Boy.

Honestly I'm not crazy about the production on FUTCT. The songs are good, but it's got that whole mid-2000s loudness wars muddy bullshit going on. TTTYG is my favorite FOB album. Folie a Deux is their best album. FUTCT is great...but honestly overrated IMO. I know that's a hot take, because it really is a solid album...but it's just overhyped.
I will say that both TTTYG and FUTCT are probably their two most consistent albums though, where I like all the songs roughly the same. FAD has the highest highs, but there are a few songs I'm kinda meh on too. I feel like in general, with every album they get a little less consistent. But they also experiment more, which is good and I can't complain about that, so...

Depends what you consider a real album. It was recorded with the intention of being their debut album. But they were rushed and weren't happy with it and got pretty screwed over.
I've only been hearing this "not a real album" and "it's a EP/mini-LP" stuff in the last few years. I've always considered it a legitimate full album and I've been a fan since 2003.
