I popped in, switched my buddy to a garchomp, then to a Mewtwo, and then back to a garchomp and when I clicked out of the buddy screen back to the map it changed to the zorua, which is when I click on it for the first time. About 12 hours ago... this is what i did for 100iv Zorua.
Had 100iv buddy out in field.... teleported to 100iv zorua coords.... before the thing spawned, i changed buddy to another 100iv pokemon... walked away from zorua, roughly half a km, came back to him and it was just him on map. Caught it, IV did not change

The method still works. Once you see the spawn, change your buddy to whatever pokemon the zorua form is taking (In your case shiny Giratina) then walk away until you can't see it, change back to your original buddy, and walk back. you should now see the zorua as zorua. The trick is to change buddy to the same pokemon that zorua form is spawned in before walking away. You can try this method and check, hopefully it will work for you.
