Easy with a flying mount and the fastest weapon possible, as you'll always deal 1 dmg anyway, like the SDMG. Just fly to the opposite side, the guardian goes slightly slower. It's easier on a large world, as you would have to turn around and avoid him when reaching the edge of a small world, and risk getting oneshot. He drops a pet.
