I know I might be a bit late but if you're in normal mode, destroyer is the easiest, in expert, twins are easiest, and in master, skeletron prime is easiest

because of the probes in master and expert

That said, yes, low droprate items kind of suck, this is a known issue of sorts, grinding is not usually a fun activity.
Honestly, if Relogic could do the heavylifting for fixing this that'd be great, but in the meantime, there are mod devs working on fixing this, either by creating dynamic drop rates (eg, you're guaranteed to see items drop after so many attempts, or the effective rate increases until one drops), or by simply increasing drop rates statically.
