there's a ton of great options just make sure you're using something with high piercing. Dao of Pow and Drippler Crippler both can destroy destroyer if you wanna get close

a much safer option would be shadowflame knife, just make sure to start as early as you can so you have enough time to kill it

Yeah, I think I may have also been looking in the wrong place, I assumed surface chests could spawn anywhere on the surface layer, but they may have only been spawning on the border between the mushroom layer and surface, or in mushroom not sure but I found a surface chest when I dug down to check the border of the mushroom layer.
