Just dump everything into chests until they fill up, then drop another chest and repeat. Then when you need something, look for 10 minutes until you realize it was already in your inventory
Alternatively, a chest for ores/bars, one for crafting materials, one for buiding blocks, one for potions, one for potion ingredients (these two ideally near an herb farm). Those will be the main ones you have to get into frequently
Maybe one or two for quest fish if you're cathing dupes, to make later fishing quests easier
