Have you considered playing one of the special seeds?

Drunk or Celebration are great places to start for changing up the game

Drunk is closer to normal, but celebration makes all the bosses super tiny and significantly changes world generation

For more challenging changes there are the Don't Starve, and Don't Dig Up seeds

For extreme changes in difficulty there are For The Worthy, and Get Fixed Boi. The latter being absurdly difficult as it mixes all special seeds together
