Most piercing weapons and ones with range will do, like yoyos, bows with Unholy or Jester's Arrows, Flaming Mace, The Undertaker and The Rotted Fork.
As long as you keep running away from it while hitting it, there isn't much it can really do to you. Just make sure to speed up when it fades away so it doesn't telefrag you as it reassembles.

If you die, the game instantly saves, even if Autosave is off. However, you could copy your character file into a different folder, start the game, then once you die, exit the game, copy and past that backup file into the Characters folder, replacing the one that had died, then restarting the game.
Or just use inventory editors to give yourself a huge stack of potions, because potion grinding is not fun.

Fair. And in some respects, I think that's improved over time, but it's also fair to say it's gotten worse in others. I think the connection there is something you can intuit from the fact that enemies drop loot, the enemy itself appears to be holding the doll, and town NPCs have multiple lines about the guide doll
