you have to beat the mech bosses before plantera's bulbs start generate

and for the destroyer, keep an eye on your minimap for when he comes at you

There are also some... interesting strats to use if you want to "cheese" the boss but I don't recommend them as it takes the fun out of the fight. And most of them only really work if you aren't playing Master or Legendary
