I made an asphalt platform across the entire world and that helped me with every mech boss

For me, Plantera becomes easy when I can just tank her hits and maneuver around her. What I mean is I would actually just fly (and if without wings just run or hook) through her whilst dealing damage. Avoiding all damage is unnecessary. Make sure you have some good defense of course.
