I've been wondering the same thing! tdark-gaming.com seems to be doing pretty well. Penguingames.fun used to be really big, but has been shrinking.
There seems to be a good amount of servers hosted in russia and europe. I tried out Leafos for a few minutes, which seemed to have a lot of out-of-game support.

I tried to use the slime mount to ride mr boney up to the moon but the vibrations from his spinning almost killed me, again, and i learned it was a bad idea (when did they change that lol, used to be able to ride him with the slime mount)

I'm pretty ready to get more health. Even if I focus on getting heart crystals, it's still gonna take me a couple hours... I do wonder if I'll be able to just go for skeletron and the dungeon, though.
If you farm ancient shadow armor, it should be possible to have skeletron as the first boss, right?

I constantly switch classes.
Main weapons are fire mace, emerald staff and Abigail as a summon. Emerald hook, umbrella for falls, and just got cloud in a bottle.
The best thing I got very early on is the Extendo-grip; the increased tile placement is so freaking useful early on.
I did just fish up a swordfish and its pretty fun, too. Forgot how useful the fish tools were
