There is different enemies on both evils and basically those enemies can drop stuff when you kill them and if you want better drops pick Crimson but it's harder but since you're a begginer I highly recommend you pick Corruption because it is way easier either way later in the game you will have the ability to have both evils on your world (sorry for no periods or commas lol)

Btw good tip for beginners is go to the dungeon to get water bolt by mining books and shooting it straight up in an open space. If the projectile comes back down there is a sky island above you
