It's pretty basic, mine horizontally in the jungle leaving a 1 block of mud layer with 3 block gap to walk on each top and bottom, mine out probably 10 sections of mud layers. should be enough.

Also repeating in other parts of your jungle will increase spawn rate as it grows like Flora.
