I want to reinstall Gentoo but I can't see the Polish stage3 files.

those are the install file download mirrors. the files are same on every mirror.

you could use a source mirror from germany, italy, france ect

the install handbook i think has links somewhere detailing how to configure regional language configuration or support

@ornate kindle use a DE (Germany) mirror there. And then when you can edit your make.conf:
GENTOO_MIRRORS="rsync://rsync.pl.gentoo.org/gentoo-portage/" or just stay with the German mirror.
