AO (short for "Ambient Occlusion") literally is supposed to be a black and white map, because it represents the shadows along corners of objects.
And how can I do to print my material on my sheet?
I mean, how can I do if I want the colour of my barrel to figure on the sheet
Select the right texture in the dropdown at the top left.
If it doesn't appear (which it should), make sure that you're using the texture you want in the barrel's material in some way.

I don't think AO maps are supposed to have color like that ๐ค
Regardless, the difference might be the renderer you're using; in his tutorial, Brackeys uses the Blender Render; by default newer blender versions will use Cycles instead.
Change the renderer and try again.
Or, even better, don't use a 5 years old tutorial.
