Are there any way to change my Minecraft server from 1.16.4 to 1.8 when I already have it with a lot of plugins ? (bungeecord btw) There are 2 reasons for doing this:

I can't find any way to completely get the same PvP as in 1.8 even tho I use via version, via backwards and via rewind and play on 1.8. I have tried Combat Plus which did not do it. And I have just download the OldCombatMechanics plugin but haven't configured it yet so not 100% if I can do it with that or not.
Many plugins have support up to 1.12 or around that only and sometimes only beta versions which support 1.16.4.

I find all this very annoying so I would like to just change the server to 1.8.9 or something then use via version for newer version if someone actually wants that.

Yeah I guess the best way would be to

BACKUP!!!
start it up with a 1.8 jar, and slowly work through all of the errors that will certainly appear. You'll have to experiment with plugin versions to find working ones

Big thanks to Fefo for the help. I've been hung up for a week straight trying to fix a broken permission for forge mods. I was combining Bukkit/Spigot and Forge to accomplish my desired mod pack where players can be humans or small dragons with different abilities. I needed the Spigot part for players to be able to ride on the dragons!

@craggy knot I found going to an i7 10700k greatly improved performance. I am running on standard sata3 ssds and things do not go slow at all. I highly doubt any average MC server will max out the R/W speeds of a modern SSD

Clock speed is what you're after. The 10700k offers turbo speeds of 5.1ghz
