Sun and Moon worshipers would probably have less trouble because they all wear armor, albeit if shot close it would dent the metal and break their bones
same follows for the two Sentinel types that have armour, parasites would prob blow up from a single close shot (Flesh Walker might take up to 3 shots though)
Protectors of the Sacred Path (with Visages and fish) would be hard to deal with since they're literally made out of stone. Creepers and Shrubs would die easily, but im not sure how it would work against Flame Wraiths considering they're ghosts.
practically all Machines of the Forges would be hard to kill, especially those whose attacks require to be close to Champion, so thats a dangerous path. again, not sure about Flame Spirits.
Mages would die instantly from a sight of shotgun, but crystal monsters would have taken up to 1-2 shots (the bigger the harder).
and The Void fiends would be hard to deal with as well because they are pretty tough to kill with all weapons except the Axe or Aeturnum. The Night would prob be the toughest one with how bulky it is.

I've done some amateur level design and here's my process:
Assuming you have a theme and an idea/progression that makes sense in relation to others I start with actual sketches in the style of concept art
I then make a very basic map with only cubic shapes
I then smooth it out and add some detail and get an idea of architecture
I test out the map, make sure you can't escape the bounds, the progression feels good, and get an idea of enemy placement
Placing enemies, adjusting map as neccesary, adding or removing areas, lighting
More detail, actual texturing (I would have used basic textures for whole walls and such till this point)
Further testing and ask friends/family to test it out too
Any neccesary adjustments to map or locations of enemies and consumables/power ups/pick ups
Small details and breakables if any
Testing and testing and testing

I want the option, in the VR version, to turn off grip to change hands. On my Quest, there was a problem with my left controller where left grip would randomly trigger making the weapon switch hand during a fight and sometimes dropping the weapon entirely. It was pretty annoying.

his bottom eyes, the ones that are looking into the inside of the helmet:
