This is a taste test/review of Dolly Parton’s Country Fried Steak frozen meal. It is a fried beef patty and mashed potatoes with country-style gravy and a side of seasoned green beans and smoky bacon. It was $3.69 at Meijer. 1 meal (340g) = 500 calories

yesterday i foraged some stinging nettle. boiled it to make it inert, then sauteed with butter and salt. it was honestly great and i want to go harvest a ton now. I also drank the water from boiling like tea. it tasted like jasmine tea
i'm trying to get into foraging, and stinging nettle seems exceptionally common, easy to identify, competitively tasty (for a green), and relatively quite healthy even compared to other greens
only thing is that my fingers still tingle because i got stung while picking it
used to have flogging wars with stinging nettles as kids. but the trick to pick them up without getting stung is stroking it a bit from bottom up, making a handle. it breaks and drains the needles. only going against the stem stings
what a coincidence I was planning to go pick some nettles tomorrow

you can do the same with the leaves, if you fold them over themselves and rub them you can then eat them raw

how I did it was to fold them while wearing gloves, then when they're unfolded touch with my bare hands to see if it's safe, then eat it

I tried eating boiled stinging nettles once and they had the texture of wet paper. I think I've heard tea from them can be good and may work well as a component to a vegetable broth though.
Seems plausible there are dishes they are good in.
So their texture is slightly fibrous but honestly they seemed as good as any other boiled green. I added butter and salt, sauteed them after a 2 minute boil, and enjoyed eating them as a side dish
I think the flavor is more interesting than spinach and would definitely add it to soup or something to get more complexity
some people dry them and then crush them into a powder that's basically just green flavor and a lot of nutrients
stinging nettles have (according to some sources) the highest protein of any green
the tea was actually really good, vaguely reminiscent of jasmine tea, and i drank three cups of the water that i boiled them in. I liked the strength although I probably only did 1/3 of the time other people will do for making tea

Managed to cook the risotto without anything burning, that's a start
It's not perfect because the rice is just a bit too hard, I guess that means I didn't put enough broth, but that's still a success
Next time will be better
if you're doing a recipe strictly follow the rice/water ratio
stove should be mid temperature, italians will swear you have to put in one ladleful of broth, mix until it's absorbed, then put in another ladleful and keep doing that until the whole broth is put in ladle after ladle, but you can just put the whole broth in all at once and occasionally stir if you're lazy
if it's mid heat and the bottom is burning it means you're not stirring enough, ideally you'd stir it the whole time and stay next to the risotto for 20 minutes doing just that, but if there's enough water I find you can come back every 1-2 minutes and stir and the result will be fine
I used a cooker and followed the booklet's recipe, which says to use the cooker in "fry" mode
I'll try again with a lower temperature setting next time

This bird came out awesome! I melted some butter in some olive oil with some garlic powder, onion powder, cajun seasoning, smoked paprika, and louisiana hot sauce. Rubbed that all over the bird and air fried

I made some mayo recently with avocado oil, lemon juice, extra egg yolk, a de-seeded calabrian chili (should've done a seed in or 3 de-seeded), bpepper and garlic obviously, some calabrian chili oil as well and that was probably half the sauce
the other half was largely ketchup
then probably 5-10% harissa paste by volume
obviously not halves above but you get the picture

12h in the fridge with some baking soda for texture. Multiple stages, first in steam oven, then finished under the grill. I have a recipe if you want.

if you want vegs there's something somewhat similar, but I can't find an english name for it. just dice sausages, fry them, then add the vegs and potatoes (or another type of meat, usually bovine)
it's pretty good and really low effort. one of those poor people foods from way back. usually people add onions and a fried egg too, personally I skip onions
Poor people food is a good way for a chef to show their skills since it's all about technique and you can't hide behind fancy ingredients, it's something I have been trying to get into more lately

Eating Indian food is different from the identity aspects of vegetarianism / carnivorism, unless you’re eating it because you’re a pro-aryan Nazi or something or avoiding it because you hate Indian people
I think there are legitimate nutritional cases to be made for eating a keto / carnivore / high meat diet, especially if you’re obese or something. On pizza specifically I can’t imagine getting picky because it’s terrible for you / extremely greasy, but I don’t think you have solid ground for disparaging carnivorism except projected animosity / misandry that bloats your feelings

I have a coffee break now and can give more of a thorough take here: I should start by pointing out that I started with using pizza as an example deliberately. The issue was that in the situation that has happened a number of times, the obstinate people are fine with the type of food itself. It's that they couldn't handle not having a few slivers of meat for that one meal. The sentiment had nothing to do with having a full carnivore diet. If they were polite about it and said, "I'm on this diet of scrambled eggs, beef broth, and steak. I'll get a separate order", that would be entirely different and would be respected. I've heard of the full-carnivore diet before and the people who live that way claim that it's a good way to shed weight (sidestepping the notion that it could be a tell that they're too into Jordan Peterson)
What I'm talking about isn't vegetarianism vs carnivorous eating. I'm talking about vegetarianism vs omnivorous eating where there's a lot of overlap and one of the people who are omnivorous is refusing to go without what is a negligible amount of meat for a single meal. When you're hanging out with friends and you're getting a meal together with the notion that you're all getting the same thing, everyone has veto powers that they use and sometimes people don't understand that veto means that the meal doesn't have the thing and trying to use the veto powers to force ingredients is just a monkey wrench in the system and defeats the purpose of the exercise
And yeah: Every time I run into someone who insists that they can't have the same food that others also want unless it's got a few tiny slivers of meat on it and own bacon merch like they're a suburban mom with "wine-o-clock" merch, they happen to be the people who fall down the right-wing rabbit hole and don't understand that Maddox's "For Every Animal You Aren't Going To Eat, I'm Going To Eat Three" blog post is satire making fun of them. Life experience is a small sample size, but that's what I've seen.
Lastly, vegetarians abstain from meat for moral reasons, which are pretty valid, so it's a bit disproportionate to say that vegetarian eating choices and carnivorous eating choices are the same. Vegetarians choose not to eat meat most often because they don't want to be an explicit part of the killing of animals while people who eat meat choose to eat meat because they want to. I don't think it's a fair comparison
On the first paragraph - you mentioned pizza as an example, but you also sent consecutive messages specifically pertaining to masculine identity and how carnivore is cringe. This demonstrates that there’s some sort of link for you between wanting to eat meat and carnivore as an identity (which, it absolutely is). I think your association of the one with guys you don’t like and the other with guys you do like causes you to disparage the one style of eating and prefer the other, seemingly from a misandrist angle. Whether you like this and want to stay that way is a question for you that I don’t care about too much, but there’s minimal difference between the types of choices, and you’ve got an outsized disdain for the one type, which you’ve (correctly) connected to your Jordan Petersons and Joe Rogans. It's not just something I've seen among my fairly large group of friends who all play Magic: The Gathering together. Recently a popular plant-based restaurant announced they were going out of business. It was quite popular here in the city and it was often filled with people, but we have this problem where restaurants will often have their rent increased by unreasonable amounts because commercial buildings don't have the same protections as residential ones where the landlord is only able to increase the rent by a certain percentage per year. All across the local communities there are people cheering its demise because they're not just people who happen to eat meat, they're part of the greater meat eating cult/culture. It's not eating meat that I find cringe. It's that almost Christian-like mentality where they act like cult and refer to normalization bias at the same time.

Generally, these orders are made with the intent that if everyone goes in on one item and eats it together, the cost is lower for everyone than if each person got their own individual items. The people I'm talking about agree that they're going into that sort of arrangement while knowing that one or more people involved in the process are vegetarian and then make it a big deal that they can't have a few slivers of meat on their pizza.
The funny thing is: For all of the memes and caricatures of angry militant vegetarians and vegans, I've seen more people who eat meat get up in the face of people who don't with mockery on the internet and obstinance in arranging food orders. That's also very parallel with Christians and atheists where Christians frame atheists as snobby, pushy, or aggressive as a smoke screen for their demand that people conform to their views
My favourite example of this sort of behavior is when vegetarians get married and spend a lot of money on great looking vegetarian food, just to have the guests get upset that there isn't a meat option, as if they can't just eat a McDouble on the way home for a couple bucks to meet their imagined meat quota

Sure, I guess they both do it for moral reasons. For people who don't eat meat, the morality comes from a place of harm reduction and for meat eaters, the morality comes from a strong desire to adhere to societal norms. That's probably the crux of why being way too performative about eating meat is associated with conservatism and eating soy is associated with "the left" (whatever that means in North America these days). I don't see how those can be functionally made to be viewed as basically the same.

I'm a little confused about this. Are you saying a typical carnivore (or omnivore? normal eater? not sure who exactly we're talking about) has as much moral conviction in their eating as a typical vegetarian?

I'd actually say that vegetarianism's ethical roots will often be found in the same spot, being accomplished with negative boundaries against meat eating / meat eaters and positive boundaries including animals in the in group of good things
this isn't true for all cases of course
carnivorism seems to be rooted mostly in like an extreme variant of keto. I think it is probably especially effective for weight loss because you can't eat meat exclusively for very long or you start to hate eating

i honestly think a lot of the blowback against vegetarians is just a byproduct of a few incidental things:
- there was not a lot of good vegetarian food widely available until recently
- most vegetarians are (probably) college-aged and most college-aged people are not good cooks
- most vegetarians are (probably) college-aged and college-aged people tend to be kind of militant and outspoken about their beliefs
but i do think there exists a weird politics-by-proxy thing where meat -> conservative and vegetarian -> liberal that some people like to lean into
when i was a vegetarian in college i probably cooked some of the worst meals of my life for my friends and family
Also food scarcity is becoming more and more of a factor. It's more expensive to reduce harm in your eating and for more and more people, it's not a cost they're able to make
and just to make it clear where i stand on the issue: i'd never say "nah, i gotta have meat on the pizza" if a vegetarian is involved, but i will briefly bitch about it to my fiance in private, and if i've just met the person, i will internally wonder whether they're needy and annoying

have only ever thought that when the chicken was super fresh and the breast meat was moist

I’ve taken to chicken breast recently after like 5 years of only eating thighs
I like that it doesn’t overwhelm the other flavors in the dish as much
Obviously people like the macronutrients of chicken breast over thighs but that’s not really important for this discussion
The fats of dark meat need to be wiped away, like with a Côtes du Rhône or something
Chicken breast will take the flavor of whatever it’s cooked in more and has a more subtle taste
However you’re also right to note texture; thigh meat is generally softer, more moist, more “consistent” or maybe “not shredding into strands”
Thighs are really hard to fuck up, even if you massively overcook them they’ll be fine
The schmaltz of thigh meat coats your tongue though which has positives and negatives re: “wipe it away with red wine”
But yeah I eat breast now because:
less fatty
Not as “loud” of a flavor (you have to build the dish around the thigh or strip it away to taste other things)
Embracing diversity / trying new things will pay in spades
Feel better after eating breast
Improvement of general cooking technique
There are exceptions to this like making coq au vin or other french stews where you want dark meat more, also generally “stewing” breasts will overcook them if you do it for long enough, dark meat you can let it run and forget about it
Dark meat doesn’t fry as well in my experience as breast (at home outside of a deep fryer, like making katsu or something), like it just doesn’t taste right
I think it depends on what you wanna cook / often cook in some period. I’ve been having rice, yogurt, kimchi, cucumber, onion, chicken at least once a week, usually 1 time for dinner and 1 or 2 leftover meals for lunch
yeah i think breast meat does better in terms of soaking up flavors on account of the dryness
remember asking a chef at a lunch place who only made chicken breast sandwiches what happens to the rest of the chicken and he said he takes it home and makes the dark meat for his kids
I think the chewiness of dark meat also makes it worse on a sandwich, where the shear of the meat is useful for managing the size of a bite
With dark meat you often end up biting off more than you can chew literally
It is formed into more homogenous chunks (rather than having relative homogeneity but stringiness of meat like breast) that you bite into, but they have like harsher walls around their “cells” (the globules / chunks of muscle) that result in a net less homogenous sandwich

Sheet-Pan Baked Feta With Broccolini, Tomatoes and Lemon
Serving size: 4 servings
Cooking time: 25 mins
Ingredients
1 bunch broccolini, ends trimmed, thick stalks split lengthwise, or broccoli, stalks trimmed and cut into bite-size pieces
1 pint grape tomatoes, halved (about 2 cups)
1 small red onion, peeled, quartered and cut into 2-inch wedges
1 lemon, 1/2 cut into thin rounds and the remaining 1/2 left intact, for serving
3 tablespoons olive oil, plus more for serving
1 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
2 (6- to 8-ounce) blocks feta, cut into 1-inch slices
Cooked orzo or farro, for serving
1/2 cup fresh basil or cilantro leaves and fine stems, roughly chopped (optional)
Directions

Heat the oven to 400 degrees with a rack set in the lower third. On a sheet pan, combine the broccolini, tomatoes, onion and lemon slices with the olive oil and toss. Add cumin and red-pepper flakes, season with salt and pepper, and toss again until evenly coated. Nestle the feta slices into the vegetables. (It’s OK if they break apart a little.)

Roast 15 to 20 minutes, stirring halfway through but leaving the feta in place, until the broccolini is charred at the tips, the stems are easily pierced with a fork and the tomato skins start to blister and break down.

Serve over orzo or farro. Drizzle with olive oil and serve with the remaining lemon half for squeezing. Top with fresh herbs, if using.

Made a stew with the stuff I had lying around, came out alright and I think would be good with a little dark chocolate or cocao powder. Lots of sweet squashes in it that i cooked with oil in the oven first for a bit to soften.
Had some nopales and ginger and black beans
Tried putting roasted squash seeds in it but was impatient and didn't roast them quite long enough.
So the texture of those is less crunchy than it should be
I was just thinking about it and oobleck is basically deep frying batter already, just needs spices and such. Could be a fun way for a teacher to justify a cooking day in a physics class hehe.
Looked it up and people have done it it looks good.

It it sweet with a very mild heat. The savory garlic flavor comes through with a strength that is more mild than you would expect.

I roasted it in the oven covered in tin foil for 45 minutes w salt, pepper, oil, water, and mushrooms, then I uncovered it and roasted it for 5 minutes
I think it could be very good with a little Italian seasoning. I was modest with the spices because I didn't know what it would taste like. Wish I had some pasta to go with it!

Along with it I have a white wine, which I have diluted with sparkling water and it is on the rocks. I do the same with red wines. I diluted them and drink them on the rocks. I remember spritz was created when austrian soldiers mixed sparkling venetian wine with water, I'm not familiar with doing it myself but it must fit german wines... I'm also more familiar to mixing creme fraiche with tuna rather than tomato, and I think the common combo is beef with tomato and fish with fatter sauces... otherwise I can't judge any of it as I haven't tasted it!
