Ok for that, it uses MiniMessage's formatting (I suggest using this site for that https://webui.advntr.dev/) - do note that it takes some time for the server list motds/icons to cache and update

When you're editing the MOTD in server.properties, you have to use section symbols in your MOTD for colors in JSON format. You can type it with \u00a7. The color code for dark red is 4, so it would be \u00a74, dark green is 2, which would be \u00a72, etc.

If you’re talking about in-game, there’s a button next to your server’s name on the dashboard. If you’re referring to the server list, you need to upload a 64x64 image named server-icon.png to your server’s root directory in the file manager. Keep in mind that on Minehut, this requires a paid plan.
