Do /clear playername to get rid of their inventory at any time. Idk abt ender chest

Go into file manager navigate to world and enter it
Now delete player data

Pretty sure you can clear players inventories and enderchests using skript. Something like clear player's enderchest. Or you could replace specific inventory slots in the players inventory with air, not sure what the slots are but something like 30+ is the players enderchest.
