It's the server owners choice, not Minehuts. Forcing viabackwards would limit freedom because, as I said, new features don't work on older client versions and may cause issues.
For example what happens if I have a 1.20.6 server and change a players size, and someone else joins with 1.20.4? Pretty sure it won't work as intended

there's a lot of people that already don't like the way minehut forces viaversion on servers so i think any more to that would be generally disliked
