If I were to switch my SD card for one with more storage will all my data transfer automatically to the new SD card or will I need to go through some sort of process

You would have to transfer the files with your computer

Your save data is in your nintendo switch so you dont have to worry about it, try transferring your data according to the information sent by lyrus above, if anything goes wrong worst comes to worst you'll just have to redownload the games inside it

make sure any media (captured photo/video) in the sd card is backed up before attempting any transfer
