You can also just lend them the cartridge and they can play it on their own Switch as well.
They only have a switch 1 and I'd be buying the switch 2 version though
"Switch 2 Edition" games work fine on a Switch 1, just without the Switch 2 enhancements of course. It'll act as if you put the Switch 1 cartridge in.

If I buy the switch 1 version and upgrade to switch 2, is the upgrade bound to my account so wouldn't work for my family members account on the same console?

It should be shared to other users on the same console as long as your device is your account's primary device, but this isn't necessary. The Switch 2 cartridge is the better option in your case. If you go the Switch 1 + upgrade route, you'd have to actually download the Switch 2 version to your Switch 2 and it'll use up storage space.
The upgrade pack is included on the cartridge on the Switch 2 copies, it's not a usable code or separate download. You just put the cartridge in like any other game, and it reverts to the Switch 1 version if inserted to a Switch 1.
