While I was playing Chibi Robo yestersy, I noticed my Joycon 2 controllers didn’t charge all the way. I put the console with the attached controllers to the dock to charge overnight, and while the console did charge fully, the controllers didn’t. I used the ac adapter that came with the console. I’m beginning to worry that the controllers will eventually die and not work anymore. Any solution?

This is normal, they have their own battery-saving measures. It seems pretty hit or miss when they'll charge to full, but it can only happen in docked/while the console itself is charging. You don't really need to worry about it, this is healthier for the batteries anyways.
If you want to ease your mind, you can update their firmware, and deplete their battery fully and then leave them docked. That should charge them fully.
They won't die, unless you mean just running out of power. The extra 10% doesn't translate to much of a difference in playtime, but it translates to better general battery health in the long run. And I don't keep track of my charging levels, but yes, I've run into this a handful of times.
