ouch, only if nintendo was willing to restore it or you had proof in some other form that nintendo would allow, there's not much you can do because gmail did give a warning that inactive accounts would be deleted in 2 years although are you sure the gmail account was deleted because there should've been at least 8 months before it got deleted as a warning.

Nintendo could try to do something the best thing i could recommend you to do is contact nintendo support or get hold of google to recover that email if possible at all
