I am almost for. With this dude but I was wondering what I could do to highlight or shade more, or in general bring it to a higher standard.

You could do a similar process for the skin, to give it a more interesting feel. Place darker orange in the recesses and where shadows would be, and a brighter orange where light would be

You also might want the eyes to be a different, bright, contrasting color to the rest of the head, if you want to bring attention to the eyes and face

You also probably want to paint those grey areas a different color

Could I use a nulin oil or smth of the sort to shade the scales?

Did some more details and added some nulin oil to the scales. I tried to do some shading on the skin but, I don’t know where to put the shadows

Also how would you recommend painting the hoof like feet, I was trying to go for a bone white so I started with a brown, and I’m not aware where to go next

For the hooves you can get natural looking bone color with a white or off white and a sepia wash. You could also choose a contrasting color like a purple, which is particularly good for something like big scything talons, as it brings more focus to them.
I also agree with adding a darker green in between plates, gives them a bit more separation, a drybrush with a lighter green might help in highlighting the edges if you don't wanna go to the painstaking process of doing it manually, might get a bit messy though with the skin already painted.
