You mean you'd want to paint the flesh following this tutorial, and are wondering how you'd paint the hard carapace to match it?
I'd imagine following the same steps, but taking into mind the differences of materials.
So keep the grime, but don't use the gloss or varnish. Instead, maybe stipple or cross hatch to create a tough looking surface.
Things like crab shells could be a good reference
