My current cliff-notes thoughts:
Azafure: heavily industrialized trade hub, but their traditional food access would probably mostly come from (lava) fishing, with meat being rarer. Combine that with being in an area with lots of lava and my brain keeps insisting Hawai'ian cuisine (hence the spam).
Ilmeris: Greek, maybe? I dunno.
Jungle civilization: ...something African? I really don't know enough about african cuisine to say for sure. Possibly something similar to uhhh I want to say Malaysia or something, where the prevalence of the sugar palm led to sugar being commonly used, except it'd be honey instead. (I know Malaysia isn't African. They're two different ideas.)
Other than that I have no idea.
Azafure in particular gives us the most to dig into. We have no idea how much arable land they had pre-Scorching, but it doesn't look like they had a ton of space to be raising cattle of any kind.
