I like to headcanon that their current state comes from the state in question being transitional, a midway through an adaptation to the newer conditions. They are not adapted yet and because the change in conditions was harsh and drastic, this transitional form is in quite the shitty shape because of that. That is assuming evolution in Calamity works both throughout the life of a singular specimen and is then directly carried onto the offspring, which isn't really the case irl, but it could work in Calamity

If it's to do with souls, I imagine it could work like this:

Throughout the life of any living being, the soul gains a more and more distinct and unique shape based on what said living being does and how they grow. The soul serves as a way to memorize this, so that multitude these soul traits are passed onto the next generation.
