• Firstly, the essence biomes are each made up of several dead Gods;
• Secondly, those essences had decades to fester before they became the current biomes;
• Thirdly, it's safe to assume DoG doesn't want a rotten meal.

The essences of Slime God, Providence and maaybe Ravager (it's unclear whether he releases essence upon death, since he's an undead God) are too low in quantity, haven't festered for enough time, and DoG probably collects the essence when he locates them
