Try uninstalling boss checklist (sadly it has some random bugs sometimes, I doubt it's that in this case, but always better to be sure), world loop (which I still have no idea what it does) and maybe some of the lighting mods

It's unlikely those are the causes of the crashes but removing them shouldn't have any downside per se

Normally you'd want omega blue armor for extra damage (due to the inability to tank DOG head if you're not at full health with a tankiness-oriented setup or via using contact damage-halving effects), and because the quicker you kill the fucker, the less likely you are to make a mistake

Anyways, even if you go full defensive (which I wouldn't recommend) , you'd really want the cherished sealocket to make it so the first two hits deal 60% less damage. This makes it so you can survive two head hits even on the glass cannon omega blue setups. I'd put it over absorber, personally, because DOG has no debuffs to speak of, and while it gives other stats, it's still not too worth it IMO.

Weapon wise, the best is lionheart, albeit holy collider and death's ascension are easier to use. If you're using a true melee option, you're best off using omega blue for offense, but if you want to keep a tanky setup, bloodflare

Secondly, I'd substitute celestial shell with warbanner of the sun, because no matter what, you're gonna do plenty of true melee hits. If you're going with a glass cannon setup, I'd also replace the ambrosial ampoule with badge of bravery.
