then connect the 2 windows servers and enable dns and dhcp on them

That really depends on what you want with 2 dns
dhcp can be set up on both
I think by default one is a redundancy
I learned that in a real environment it's better to keep both separate
right but a real environment should know exactly what it needs
because if one goes down with like a DHCP then how are pc's going to get their ip leases
