3 is in the american revolution
4 is with the golden age of piracy
Unity is in the french revolution
Syndicate is victorian england (it kind of sucks though)

I agree with @fluid knoll about Black Flag, definitely one of the most iconic ACs but it was already the 6th game of the series so the setup about the Animus and everything around it was already well established in the first episodes. Anyway, Origins was the one game that radically changed the style of AC, adding a much bigger emphasis on builds and RPG mechanics. Odyssey took it to a higher level being considered as the best AC ever by a lot of people. And then Valhalla was pretty cleaving, it really is about everyone's own taste and preference, some people love it, some hate it.
